Baghala Ghatoagh :
Baghala ghatogh or baghali ghatogh is a northern Iranian dish made with baghalas (Rashti faba beans), dill, and eggs. It's usually served with kateh (Persian rice dish) in northern provinces such as Gilan and Mazandaran, and can be considered a khoresh (Persian stew). It is spiced with turmeric, salt, garlic, and sometimes pepper.
Preparation
Remove the green bean from the two peels. Then mix bean, the chopped garlic, turmeric and dry dill, butter in a pot or Komaj (with a glazed clay pot and usually Guilans use it for the Baghala gutagh) and placed on a gentle heat and fry bean a little, then add enough water to get on the bean to cook the bean slowly. Then break eggs in it and put it in the container to cook eggs. Add Salt and pepper. This stew is cooked with salmon, salted fish and olives, yogurt and white horseradish. Description: If using dry bean, will soak it in water for about 10 to 12 hours earlier.
